Falafel with turmeric tahini sauce recipe, dairy-free

​We believe that preparation is key when it comes to healthy eating; whether this means cooking up batches of food for the week on a Sunday or simply buying the ingredients you need to make meals for week. Whichever you do, these baked falafels by @choosingchia make a delicious lunch or dinner option. With a cooking time of 35 minutes, they are quick and easy to put together for a healthy middle eastern inspired dish.

Serves 1

Ingredients

Falafel:

1 can (200g)             chickpeas

1 cup                         spinach

½ cup                        parsley

2 tbsp.                       oat flour

1                                garlic clove

¼ cup                        onion

1 tbsp.                       olive oil

½                               lemon

½ tsp.                        ground cumin

½ tsp.                        ground coriander                                   

Salt and pepper to taste

Tahini Turmeric Sauce:

½ cup                         tahini

¼ cup                         warm water

½ cup                         tahini

¼ cup                         warm water

½                                lemon (juice)

1                                 garlic clove, finely chopped

1 tbsp.                        maple

½ tsp.                         turmeric

 

Method

1.     Preheat the oven to 375 degrees.

2.     Place all of the ingredients in a food processor and pulse until a dough forms.

3.     Line a baking pan with parchment paper

4.     Use a spoon, or your hands to make small falafel patties and place on your baking pan.

5.     Bake for 10-15 minutes, until falafel balls are golden brown around the edges.

6.     For the sauce, mix all of the ingredients into a small bowl until incorporated.

7.     Serve with baked falafel
