Goji berry energy ball recipe to fuel your workouts

An antioxidant-packed energy boost! These goji berry and beetroot energy balls are great pre- or post-workout or simply as a snack to keep your energy levels stable throughout the day.

The secret ingredients which will give you that energy boost are:

Goji berries - the high Vitamin C and antioxidant content are perfect for boosting your immune system and speeding up recovery post exercise. They are also rich in fibre, which releases fuel slowly into the bloodstream – great for sustained energy during exercise.

Beetroot - did you know beetroot has been shown to improve exercise endurance? Beetroots are a source of nitrates, which help the body to use less oxygen. Therefore, people will feel less tired when they are exercising. Beetroot has the added benefit of lowering blood pressure.

Ingredients:
Makes approx. 6-8 energy balls
Preparation time: 5 mins

  • 20g of ground almonds
  • 2-3 large Medjool dates
  • 20g of beetroot powder
  • 18g of coconut oil
  • 10g of dried goji berries
  • 10g of chia seeds
  • 10g of oats
  • desiccated coconut (optional)

Instructions:

  • Blend, roll into balls.
  • Roll the balls in desiccated coconut to make them look pretty.
  • Store in the fridge until you are ready to eat them.
