Gluten-free matcha and coconut overnight oats recipe

This recipe for matcha and coconut soaked oats with pomegranate is the perfect energy yielding breakfast!

This recipe is a super energising way to start the day. The porridge oats are full of slow release complex carbohydrates and the coconut is full of energy yielding medium chain fatty acids combined. Matcha green tea is extremely high in anti-oxidants particularly catechins, which have been shown to have cancer prevention properties.  It also contains an amino acid called  L-Theanine which works on your GABA neurotransmitter pathway giving the effect of enhanced mood, improved memory, and even promotes better concentration. L-Theanine in combination with the natural caffeine found in green tea can create an energy boost of up to 6 hours.

Ingredients

  • 100g Gluten free porridge oats
  • 200ml Coconut drinking milk 
  • 125g Vanilla Coyo yoghurt
  • 1tsp Matcha powder
  • 30g Organic desiccated coconut

Method

Place all the ingredients in a container and allow to soak over night.

Top with pomegranate seeds and shaved coconut.
