Healthy peppermint mocha date snacking balls recipe

If you’ve jumped on the clean eating bandwagon and are looking for healthy nibbles to snack on then Natalie from @feastingonfruit has got you covered. These balls of bliss are not your usual ‘mixed fruit and nut’ but rather an in indulgent bite made up of oats, dates and cacao. If you’re avoiding caffeine, feel free to omit the coffee and opt for mint chocolate instead. Either way you cannot go wrong.

Makes 15 balls

1 cup              rolled oats

1 tbsp.            cacao powder

1 tsp. espresso powder OR 1 tsp. coffee flavouring

20                   pitted medjool dates

1½ tsp.           peppermint flavour

For coating:    cacao nibs

Method:

1. Process the oats in a food processor until fine
2. Add the rest of the ingredients
3. Process to make a ball
4. Divide and roll into 13-15 balls.
5. Roll in cacao nibs or coating of your choice Refrigerate. Keep in the fridge
