Makes 15 balls
1 cup rolled oats
1 tbsp. cacao powder
1 tsp. espresso powder OR 1 tsp. coffee flavouring
20 pitted medjool dates
1½ tsp. peppermint flavour
For coating: cacao nibs
Method:
1. Process the oats in a food processor until fine
2. Add the rest of the ingredients
3. Process to make a ball
4. Divide and roll into 13-15 balls.
5. Roll in cacao nibs or coating of your choice Refrigerate. Keep in the fridge
