Healthy eating and wellbeing: Emily Macfarlane
#TeamVITL Ambassador, Emily Macfarlane is a chef and a model currently living in London. She shares her wonderful food creations and adventures on social media to show people that cooking isn’t just about making meals for yourself, but also about creating and putting love into something to share with people closest to you.
So Emily, tell us a little more about yourself…
I'm an Aussie living in London, leading the most hectic lifestyle imaginable. I used to be a chef and model but struggle to find all the healthy ingredients I used to use in my cooking back at home, as well as finding the time to cook healthy foods. I'm currently a business development officer for a beauty app called Priv which delivers on demand beauty services whenever, wherever.
Where did your wellbeing journey begin?
When I started modelling nine years ago, I realised how important it was to have a healthy mind and body so I am careful with what goes into my body and I exercise as much as I can.
What has been your greatest health and fitness achievement?
I compete in tennis tournaments, fun runs and try out new sports on a regular basis. Running was my biggest obstacle to overcome as I hated it so completing long runs always gives me a huge sense of accomplishment
What does your morning routine look like?
My morning routine consists of me pressing snooze a few too many times, taking a shower to wake myself up and then the magic happens: breakfast. I always have a superfood smoothie, eggs and hot water with lemon. This prepares me for my 50 minute walk to work!
Do you have any particular healthy cooking hacks or top tips?
To get more health in your diet, try to add as many colours to your meal as you can. This doesn’t mean pouring m&m’s over some skittles, I’m talking creating a big bright salad, a pan of roast veggies with your favourite protein and beautiful fragrant stews packed with vegetables. I’m definitely a meat eater but eating as many vegetables as you can does wonders.
What’s your favourite healthy go-to meal?
My go-to healthy breakfast is baked eggs, lunch is brown rice with chicken, beef or prawns and loads of veggies, dinner is salmon with sweet potato fries and asian greens.
Do you have a favourite motivational quote or motto you live by?
Happiness can be found in the darkest of places if one only remembers to turn on the light
What is one thing you would like everyone to try, remember or know?
I think the way to get the life you want is to work for it. Do something every day that pushes you closer to your goal.
