Raw Chocolate
1 cup/100g coconut oil
¾ cup/70g cacoa butter
½ cup/120ml maple syrup or coconut nectar
1 cup/ 70g raw cacao powder
3 sachets vitl greens
Pinch of salt
Method
1. Melt the coconut oil, cacao butter, and maple syrup in a glass or metal bowl over a pan of simmering water and stir to combine
2. Take off the pan and sieve in the cacao.
3. Stir until dissolved in to glossy, smooth molten chocolate.
Healthy Easter Chocolate Nests with Sugar Free Marzipan Eggs
Changing up the classic Easter cereal nests, made with gluten free high protein quinoa puffs, flaked almonds and coconut shavings for a nourishing twist
Ingredients, makes 12
Molten VITL SuperGreens Vanilla chocolate as recipe above
50g flaked almonds
50g quinoa puffs
100g coconut shavings
Method
1. Place all of the dry ingredients in a bowl
2. Add the molten VITL SuperGreens raw chocolate mix and stir through thoroughly.
3. In cupcake cases, place spoonfuls of the mixture, shaping into a nest.
4. Once you have made 12, put in fridge to set.
5. In the meantime, make the marzipan eggs.
Sugar Free Marzipan Eggs
1 egg white or 30g of pasteurised carton egg white (esp. if for children, pregnant mothers or the elderly)
150g ground almonds
1tsp almond extract
6g stevia
Method
1. Add the egg whites, stevia and almond extract in a bowl and beat with electric mixer, just until it is combined a bit, don’t beat it stiff.
2. Add ground almonds and beat together until you can bring the mixture together into’dough’ by hand.
3. To make green eggs, add ½ a VITL Greens sachet to ½ the mixture.
4. Using your hands roll into small smooth balls and then shape into 1cm ‘eggs’.
5. Place 3 eggs into each chocolate nest to serve.
Goji Berry and Vanilla Superfood Easter Chocolates
Goji berries pair perfectly with vanilla, they add texture as well as adding to the superfood credentials. All you need is our raw chocolate recipe and some ‘Easter’ shape silicon moulds.
Ingredients
Molten VITL SuperGreens Vanilla chocolate as recipe above
30g Dried goji berries
Method
1. Stir the goji berries into molten VITL SuperGreens raw chocolate mix, stir through thoroughly.
2. Carefully spoon into Easter silicon mould with eggs, chicks, bunnies etc. Or equally just place on greaseproof paper to make your own ‘bar’.
3. Place in the freezer for 15mins to set.
4. Store in the fridge until ready to eat.
