Healthy miso and honey-glazed aubergine recipe

Ingredients

  • 2 large aubergines 
  • 4 tbsp brown rice miso (you can use red or white miso if you prefer a milder flavour) 
  • 1-2 tbsp honey (or agave or maple syrup)
  • 1 tsp freshly grated ginger 
  • 2 tbsp tamari soy sauce 
  • 3 tbsp mirin 
  • 2 tsp sesame oil 

Method

  1. Preheat the oven to 220℃ (or 200℃ for fan assisted ovens) 
  2. Wash and dry the aubergine, and cut them in half lengthwise (keeping the salk intact). Score the flesh deeply (but be careful not to cut through the skin) in a criss-cross or diamond pattern 
  3. Put the rest of the ingredients in a pan and heat gently until the miso dissolves and the glaze thickens 
  4. Place the aubergines on a baking tray cut-side up and spread just over half to two-thirds of the glaze on the aubergines 
  5. Bring the edges of the baking sheet together and seal them (i.e. with a twist) to make a little parcel, and roast for 20 minutes 
  6. After 20 minutes, remove the tray from the oven and open up the parcel, smear the aubergine with the remaining marinade (you may need to heat it again so that it’ll spread easily) and return to the oven uncovered for another 20-30 minutes until the flesh is very tender and the glaze has caramelised 
  7. Remove from the oven and serve (let it cool slightly before digging in!)
