Cardamom and coconut dairy-free porridge recipe

Ingredients

  • 1 can coconut milk 
  • 1 tbsp. cardamon pods 
  • 1 cup / 100g jumbo oats (gluten free, if required) 

Method

  1. In a pan bring the milk and cardamom to a gentle Simmer, allow the pods to infuse in the milk for 6-10 minutes (the longer the better).
  2. Remove the pods and add the oats. Lower the heat slightly and cook through for 8-10 minutes, stirring regularly.
  3. Pour into 2 bowls and top with some chopped figs (#InSeason), almond butter/anything else you have in the store cupboard!
