Summer healthy cherry and coconut ice lolly recipe

Creamy, fruity and a delicious way to enjoy cherries which are a great source of vitamin A, calcium, antioxidants and iron.

Nutrition facts (per serving): 317 kCal, 12.2g fats (1.5g unsaturated, 10.7g saturated), 53g carbohydrate (of which sugars 26.29g ), 1.5g protein

You’ll need

  • 6 popsicle sticks 
  • A popsicle mould 

Ingredients

  • 1 can full-fat coconut milk 
  • 450g cherries (fresh or frozen), pitted 
  •  200ml maple syrup (or another sweetener of choice) 
  • 1 tablespoon - 1 scoop (30g) of protein powder (preferably unsweetened, otherwise reduce sweetener)  
  • ½ teaspoon almond extract 
  • 1 teaspoon vanilla extract 

Method

  1. Put the coconut milk, half of the cherries, maple syrup, protein powder, almond and vanilla extract into a blender or food processor and blend until smooth 
  2. Chop the other half of the cherries, and fold into the ice cream 
  3. Pour into the popsicle moulds, add a stick and freeze until set
