200ml maple syrup (or another sweetener of choice)
1 tablespoon - 1 scoop (30g) of protein powder (preferably unsweetened, otherwise reduce sweetener)
½ teaspoon almond extract
1 teaspoon vanilla extract
Method
Put the coconut milk, half of the cherries, maple syrup, protein powder, almond and vanilla extract into a blender or food processor and blend until smooth
Chop the other half of the cherries, and fold into the ice cream
Pour into the popsicle moulds, add a stick and freeze until set
