Overnight soak coconut, cacao and chia seed recipe

Make this the night before and you'll wake up to a tasty treat to set off your day right.

Serves 2

Prep Time: 5 mins + overnight soak

Ingredients:

  • 240ml coconut milk 
  • 4 heaped tablespoon chia seeds 
  • ½ teaspoon vanilla extract or vanilla powder 
  • Maple syrup/other sweetener to taste (skip if you're keto!) 

Optional: 

  • ¼ teaspoon cinnamon  

Toppings:

  • 1-2tsp cacao nibs 
  • 5g hazelnuts (roasted) 

Method

  1. Whisk together the coconut milk, vanilla and maple syrup together (if it’s easier, place them all in a blender and blend for 10 seconds) 
  2. Stir in the chia seeds. If you want a smooth texture, add the chia seeds to the blender and blend for 30 seconds - 1 minute 
  3. Pour mixture into a bowl and cover or divide amongst individual serving jars 
  4. Place in the refrigerator overnight to set  
  5. Add toppings and serve
