Low-calorie crayfish and tomato protein pasta recipe

Crayfish (also known as "crawfish" and even "crawdads"... not sure who decided that one...) are an excellent and sustainable source of protein. Black bean pasta is a delicious alternative to wheat pasta and each serving is only 310Kcal.

Serves 2
Ingredients
100g black bean pasta
1 tbsp olive oil
300g cherry tomatoes (halved)
2 cloves of garlic (finely chopped)
100g spinach
120g crayfish tails
Handful of basil (chopped)
Sea salt and black pepper to taste
Method
Place a pan of water on to the boil. Meanwhile, heat the oil in a deep frying pan and add the tomatoes to cook on a high heat for 7 minutes. Add splashes of water to stop them sticking.
After 7 minutes, your water should be boiling, add the bean pasta and cook for 7 minutes.
At the same time, add the garlic to the frying pan and cook for a further 5 minutes. By this point, the tomatoes should start to disintegrate and create a sauce. For the last 2 minutes, add spinach to wilt and the crayfish to heat through.
Drain the pasta, mix in the sauce, season and top with basil.
