Makes 24 cookies
Ingredients
210g almond flour
¼ cup or 50g coconut oil
3 tablespoons of maple syrup
¼ tsp sea salt
½ tsp baking soda
½ teaspoon orange zest (plus more for decoration)
1 tablespoon orange juice
40g pecans, halved
½ cup dark chocolate chips (use vegan ones if preferred)
Method
- Preheat oven to 180℃ (fan 170℃) and line a baking sheet with parchment paper
- In a mixing bowl, mix together all the dry baking ingredients: almond flour, sea salt, baking soda
- Add the coconut oil, maple syrup and orange juice
- Fold in the chocolate chips and orange zest
- Scoop up rounded tablespoons of the cookie mixture and spread these on your lined baking sheet
- Slot in the pecan halves into patterns (roughly four pecan halves per cookie) - such as a cross or flower
- Bake cookies for about 10 minutes, until the edges start to turn brown
- Take the cookies out of the oven, sprinkle with more orange zest if desired and allow them to cool before serving (if you can wait that long...
