You’ll need
- 6 popsicle sticks
- A popsicle mould
Ingredients
- 1 can full-fat coconut milk
- 450g cherries (fresh or frozen), pitted
- 200ml maple syrup (or another sweetener of choice)
- 1 tablespoon - 1 scoop (30g) of protein powder (preferably unsweetened, otherwise reduce sweetener)
- ½ teaspoon almond extract
- 1 teaspoon vanilla extract
Method
- Put the coconut milk, half of the cherries, maple syrup, protein powder, almond and vanilla extract into a blender or food processor and blend until smooth
- Chop the other half of the cherries, and fold into the ice cream
- Pour into the popsicle moulds, add a stick and freeze until set
