Prep Time: 5 mins + overnight soak
Ingredients:
- 240ml coconut milk
- 4 heaped tablespoon chia seeds
- ½ teaspoon vanilla extract or vanilla powder
- Maple syrup/other sweetener to taste (skip if you're keto!)
Optional:
- ¼ teaspoon cinnamon
Toppings:
- 1-2tsp cacao nibs
- 5g hazelnuts (roasted)
Method
- Whisk together the coconut milk, vanilla and maple syrup together (if it’s easier, place them all in a blender and blend for 10 seconds)

Stir in the chia seeds. If you want a smooth texture, add the chia seeds to the blender and blend for 30 seconds - 1 minute
- Pour mixture into a bowl and cover or divide amongst individual serving jars
- Place in the refrigerator overnight to set
- Add toppings and serve
