Ingredients
- 100g black bean pasta
- 1 tbsp olive oil
- 300g cherry tomatoes (halved)
- 2 cloves of garlic (finely chopped)
- 100g spinach
- 120g crayfish tails
- Handful of basil (chopped)
- Sea salt and black pepper to taste
Method
- Place a pan of water on to the boil. Meanwhile, heat the oil in a deep frying pan and add the tomatoes to cook on a high heat for 7 minutes. Add splashes of water to stop them sticking.
- After 7 minutes, your water should be boiling, add the bean pasta and cook for 7 minutes.
- At the same time, add the garlic to the frying pan and cook for a further 5 minutes. By this point, the tomatoes should start to disintegrate and create a sauce. For the last 2 minutes, add spinach to wilt and the crayfish to heat through.
- Drain the pasta, mix in the sauce, season and top with basil.
